- Preheat oven to temperature directed on tater tot package (ours read 425 degrees). While waiting for the oven to preheat, brown ground beef in a medium saucepan with green bell pepper, red onion, chopped pickles, salt, and pepper. When the meat is cooked, drain well and stir in Sweet Baby Ray's barbecue sauce. (Adjust for how saucy you like your totchos!) Let rest in the pan.
- Arrange tater tots as directed on a baking sheet. Bake for about 15 minutes (or until light gold and crispy). While you wait, prepare your toppings (cheeses, tomatoes, green onion, sour cream, cilantro).
- When the tater tots are ready, pop them out of the oven and add the barbecue beef topping. Sprinkle cheeses and tomato over the top of the totchos. Return to oven for 5-6 minutes; long enough to melt the cheeses.
- When cheeses are melted, let cool while you add sour cream, green onion, and cilantro. Enjoy warm (and with napkins)!
